1lb of lean ground meat (beef, turkey or buffalo) 2 Tbsp Olive oil 1 onion, chopped 1 green bell pepper, chopped 1-2 med zucchini, chopped 1-2 med yellow squash, chopped 2 Tbsp of minced garlic 2 c tomato sauce 1 Tbsp chili powder (to taste) 1/2 tsp cumin powder (to taste) salt & pepper to taste 1) Saute all vegetables and garlic in olive oil until tender. 2) Add the ground beef. Continue to cook until the meat starts to brown. 3) Add the tomato sauce and spices. Simmer on low for about 15 minutes. Serve on a bun (optional) or in a bowl Crock Pot Option 1) cook ground meat until browned 2) Add all ingredients into crock-pot and stir 3) cook on low for about 6 hours Calories: 325 Protein: 28g Carb: 29g (w/o bun) Fat: 13g |
